The new creative tapas menu at our restaurant in Palma de Mallorca


OMBU, our restaurant in Palma de Mallorca, was born in the Mallorcan capital and has spread its wings to all the imaginable corners of the world. The flavours hidden within our gastronomic offer are the best way to travel. We believe in producing creative tapas in our kitchen to create a bridge between cultures and contemporaneity. Which is why our restaurant in Palma will be presenting a new tapas menu as of April 2019, completely renovated, in which you can experiment with a multisensorial experience in every bite. Creative tapas with international touches in Palma

To Mallorca, tapas are an integral part of its cuisine. They make up a big part of our day to day and it is where you will find the majority of changes to our menu. On this occasion we have been inspired by Mediterranean and world flavours, perfecting the textures of our sauces and their creaminess so that everything has a purpose and most importantly, is enjoyed when eaten. You will find Asian, Indian and southern European food. Creative tapas with the intention of making every bite a very special mix of textures and flavours.


Unique creations at our tapas restaurant in Palma

Amongst the creations worth highlighting on our new menu, you will find foie gras French toast made with brioche which at the very first glance draws you in. It is a savoury dish which has the look of a dessert, as it is French toast. We have adapted this dessert to be a savoury tapas dish, accompanied by a calvados and apple ice cream. Equally as impressive is our beef cheeks with Japanese and Cuban flavours. This creation is made with a ramen stock base and cooked yucca with Cuban mojo. The mix of these flavours is intensified by grated crispy nori as a garnish.


Tapas in Palma de Mallorca: bao bread with crab and a reinvented lasagne

We continue to present the new dishes on our menu at our restaurant in Palma de Mallorca with a bao bun with soft shell crab fried in tapioca flour accompanied by a crab stock, saffron and curry mayonnaise. A mouthful that’s crunchy, intense and very special. On the other hand, we have a marinated pork lasagne with stir-fried ginger, soy, coconut milk and other Asian products. To all of this we add a coconut bechamel with a sprinkle of tomato powder and Korean spices, giving it a special kick.


An Iberian oyster and the reinvention of the Caesar salad

We have also added a new twist to our oysters: the Ostra España. This time with an Iberian ham foam to give it a unique and national touch. In addition to our one bite tapas we have our Caesar lettuce wrap: Tudela lettuce heart with Caesar salad, fried chicken, lettuce ice cream and Caesar dressing with grated parmesan.
